Macadamia Nut, White Chocolate & Espresso Blondie Bars


When I was in Hawai'i last year, I bought a bunch of macadamia nuts. I've been meaning to use it for a while now. But now that I have time & occasion to bake, I'm all prepared with recipes to use those up! First up is this easy blondie recipe. You just mix up a bunch of ingredients in a bowl and pour it into a pan to bake. How simple is that?


The flavors of the coffee goes really well with white chocolate adding a slight bitterness to counter the sweetness from chocolate. The nuts add a nice crunch throughout. The bars are nice and gooey from the brown sugar. Honestly, there's nothing not to like about this. It's a simple crowd pleaser. I appreciated having this as an emergency stash of dessert in the freezer the other day ;)

Makes 12 servings/bars

Ingredients:
8 tbsp salted butter, room temp
1 tsp vanilla extract
2 tsp instant espresso powder
250 gm light brown sugar
2 eggs
1 cup flour
3/4 cup/105 gm macadamia nuts, coarsely chopped (or if halved already, then don't chop)
3.5 oz white chocolate, coarsely chopped



Procedure:
Preheat the oven to 350 F. Line an 8 X 8 pan with parchment paper and set aside. In a late bowl, beat the butter, vanilla extract, sugar and espresso powder till light and fluffy. Add each egg, one at a time and beat well till completely mixed in. Beat the mixture for another 2 minutes till very fluffy. Add the flour and beat it in just until mixed. Add the nuts and chocolate and fold it in getty. Spread this onto the prepared pan and bake for 35-40 minutes until a tester inserted into the middle comes out without any crumbs attached. Bake on a wire rack until completely cool and cut into 12 bars. Enjoy!
